Editing driver hand placement/positioning

Hi guys

Looking to edit a drivers hands positioning so that he doesn't turn the wheel a full 360 degrees, and also so he actually places his hand on the gear lever when shifting.

No idea where to start, any advice would be greatly appreciated, cheers.
